Have you played with the dd command in the terminal? Some hints talk about using that to try and copy data off damaged drives.

Comments in that same thread talk about using ddrescue which is available via macports.

As far as recovering deleted files go, it's pretty difficult because there is a constant stream of stuff being read and written to your drive so the chances of getting something back after deletion are not all that great.
