For double spacing, and most other kinds of styling, you'll want to use the inspector, by pressing command-option-i. There's a group of radio buttons, and I think you'll want to press “text.” Then under the text tab, you'll see an option that says lines, with the number 1. Change that to 2, and it'll be double spaced. Just press escape, or command-option-i again, to hide the inspector.
To tell the number of pages, you can either tell this in the inspector under document > info, or if you stop interacting with the body of the page, usually it'll say something like “body page 1 of x.” If you stop interacting again, you'll be in the layout area where all of the pages are listed.
