Hi, folk, This method I found while I was poking around last night caused me to slap my forehead vigorously. It might be a little easier for some folks.
Assuming you have your email set to quote text in replies, hit "reply" and then go to the line that says, "on date, so-and-so wrote." It's a regular text field and you can select and deselect to your heart's content, copy the email address from there, delete the list address in the "to" field, and paste your new one there.
