Hi Ray,

Unchecking the boxes for "Keep iTunes Media Folder Organized" and
"Copy files to iTunes Media folder when adding to library" in the
advanced pane of your iTunes preferences doesn't work after the fact
once you've added the folders to your iTunes library with these
unchecked, but it should work if you have these set before you add to
library, as Chris stated. Files and folders are never renamed if they
reside outside the current iTunes Media folder location when they are
added.  Only copies that placed in your iTunes Media folder location
are renamed to match the label tags.  You can always find the other
versions out side of your iTunes library location if that's where they
were located originally, change your preference settings, delete the
versions copied to iTunes, and add these again.

And I though you could manually manage your music if you sync your
iPhone to your computer.  Probably the easiest way to control this,
though, is to create a playlist that contains music you want on your
device, and check that you only want checked library tracks and
playlists to sync.
