Okay, how about another approach. Go through with a "find and replace," function and replace all the examples of Theta or Iota or Nu or whatever with the words "theta," "iota," "nu." This is your copy of the textbook, you can mark it up however you want.
Also, in passing, I would note that different voices speak different symbols differently; E.G., Alex will say the "ohm," symbol next to a Skype contact's name, while Fred's voice will not say it, even though all other settings are the same.
