Boy, this is hard to explain off the top of my head but you need to set Mail to 
move deleted messages to the Trash folder used by Gmail and not by Mail on your 
local machine.  Let me find a link to a well-written article on how to set up 
Mail with IMAP and specifically Gmail.  It goes into linking the trash and spam 
folders in Apple mail with those used by gmail.  Once mail goes into the 
[Gmail]/Trash, those messages should be gone from the All Mail folder.  Try
