Hi William. I finally figured out the answer to the question you asked. It took me a while because I couldn't remember what it was under.
You can change the way VoiceOver handles this. If you go to Verbosity in the VoiceOver Utility with Control option f8, you then choose text with the VO space. Press tab until you hear Speak text the cursor passes. Press down arrow until you hear Speak text to the right of the cursor. This should result in the delete command being spoken the way it is in Windows just like you are used to, and you can use only the delete key to perform the delete command.
