You add the signature, and once the signature is added, you will have an additional option as you tab through a new message creation, which will be for selecting what signature you want to use. If you only have one, this isn't a problem -- you can choose to use the signature or not, I think. If you have multiple signatures, for multiple accounts, for example, you can select what signature should be used.
