Hello Paul, At the beginning of an installation, there is a Language Chooser screen. Did you select English at this point? Also, did you erase the HD? If not, then the language settings appear to be conserved.
I've regularly done installations in both French and English and never had a problem, but I always erase the Hard drive first.
