Yes, if I understand your question correctly, just hit Command-I while in iTunes and focused on the file(s) in question. This will open a file information dialog; select the Info tab and then just VO-Right arrow through all the options that you can change. You can change for example, track title, artist, album title, album artist, disc number and many more. If you select multiple files at once before opening this up, you can change some of these options across all those files; this is handy for things like total number of tracks in album, album title, artiss, etc.
