Hi, I use the streaming feature of the Express with VO on all the time without breaks in the streaming except in specific situations. The only time I've had choppy streaming is when I'm overtaxing the network with copying files between devices or Time Machine backups going to the HD connected to my Extreme. My configuration may be a little different than yours, as I have an Extreme for the centre of my network with my Express and another Extreme connected wirelessly to the centre device. Therefore, the music has to go through the Extreme on its way to the Express. The Express has a slower processor and can't handle as many devices but usually is just fine for home networks. so, in my opinion, your MBA should have plenty of processing power to be able to run VO and stream music at the same time.
Try restarting your Express from Airport Utility and see if that makes a difference. You could also set the channel on your Express to something else in case there's something causing interference.
