Hi,

I don't believe that you can tell it to stop but if you select the specific 
iMap account in the Accounts pane of Mail Prefs, then select Mailbox 
Behaviours, you can tell Mail to save the messages on the Server and to delete 
local ones upon Quitting Mail.  Hopefully that does the trick.
