If you are using an Exchange server with Outlook and Macintosh and your other 
systems then you should just continue to use Outlook.  Assuming current OS's on 
all of these systems they will all be able to keep in sync with the exchange 
server.  You will get in trouble if you try to sync via iTunes and also another 
method, but I find that if you are using a profile that is unusual then you 
Apple will warn you.

Before changing any sync settings I highly recommend that you export any data.  
I have heard of multiple cases where people lost most of their contacts because 
tried to clean out. after a sync
