The iOS device to which the message is being sent determines if it's going to be sent as a text or iMessage. If you have speak hints turned on, touch the send button and listen to the hint to find out what it is going to send as. What you may try however is to turn off iMessage, then turn it back on. Do this by going to settings, messages.
