If you're not averse to the unix shell I've been playing a good bit with the Sox package:

http://sox.sourceforge.net/

which I installed using MacPorts:

http://www.macports.org/

Once setup you can do commands like

sox originalfile.aif convertedfile.mp3

to covert one format into another. Of course there are piles of additional parameters such as data rates, channels, effects and mixing.
