Mike, 
In pages, go to edit, then Writing Tools, then Show Statistics and then a box 
will open, I use the swipe on the trackpad to get to the wordcount area after 
title and name and comments etc. 
For spell check, do CMD+colon I think. CMD+semi-colon just checks that word I 
think, while Cmd+colon checks the whole document. Any suggestions you have will 
appear in a table, which you need to interact with if you have multiples, 
otherwise you can just tab through to ignore or change if the word is already 
selected. I'm not sure how to change the language, actually, this is something 
I would like to know-for me, it's changing it from US English to UK English, it 
keeps trying to change my our words to or and my ise words to ize.
