It took a good 30 minutes which kind of surprised me. Apparently it fully wipes and reloads the phone OS and then restores all your apps and data from the iTunes backup. This restore runs in the background so you can keep the phone tethered and use it while the rest of your media comes back. I don't recall previous updates wiping everything out like this.
