Hello Denise, In Pages Preferences, under General, you can select the template with which you want Pages to open by default. This does not prevent you from getting to the Template Chooser as there is a menu item with a shortcut for this.
And if you create your own templates, you can simply open the template you wish to use and Pages will be launched.
