Hi list: Here's an update to my situation.
Previously, I could not get VO to start after I booted up into Lion. Well, I got an old monitor, plugged it in, and, now, VO comes up just like it should. Don't know why this should make a difference, but, it does. One other note: Lion was not saving my keyboard preferences, but, now that I hooked a monitor up, Lion is now saving keyboard preferences, as well. So, for anyone else wanting to run headless, you might want to find an old monitor that no one wants. This one isn't even hooked up to electricity, but, it still seems to make a difference.
