Hey Matt. I'm not sure about mail but I can help you with iTunes. The number of podcasts that you are seeing is most likely because of how many are on the feed at that time. SOme podcasters only have so many while others have every last one. Also, make sure you are not using grid view because you can more easily expand and collapse the different podcasts.
