hi, Chriss, Colloquy has a "new connection" option in the file menu. The control to enter your server is indeed an edit combo. There is a checkbox there to "remember this connection. Also if you go to your connections window, each remembered connection is listed in it. If you go into the preferences with command-comma, you can set up the appearance of the interface, such as whether the connections window stays open, or whether your notices appear in a separate window.
