I think I haven't done it yet but I don't understand completely.
 

Where should I create the new user: on Facebook.com or adium?

You mean chat.facebook.com in stead off chatfacebook.com?
and, I see no options tab in the preferences of adium.
only: accounts, global, personal, view, messages, state, events, filetransfer 
and advanced.   
(it's translated from dutch so I hope you understand).
