George,

I believe that the Bluetooth config info is stored within the firmware so the 
keyboard and mouse will remain paired even when the HD is restored/replaced.  
I'm not positive but 90% sure of this.  I've not had occasion to test this as 
far as I can remember but it is a logical conclusion in my mind.  If you 
consider that the new iMac is basically a computer with a brand new imaged HD, 
that info is not yet within any Preference files so it must reside within the 
firmware somewhere.
