Hi Cam, You'll need to move items you wish on the iPhone into a Playlist then sync the appropriate Playlists. There may be round-a-bout ways but, in my opinion, it is far better to let iTunes and the iOS do the syncing in the way it was set up to be instead of any hacking sorts of solutions.
