Well let me try to answer your questions.

FIrst I have no idea what you mean with regard to the disc being read to fast. 
I've ripped manyCDs in iTunes and unless there was a problem with the disc 
itself, I have not had any problems and especially with books. I do however 
recommend AUdiobook BUilder, which is about $10. I do not have the URL handy, 
but a Google search would get it for you. THis is a nice app because it takes 
care of everything and once finished it puts the audio book in iTunes; all 
sorted, tagged, etc.
As far as jumping from sources table to the table that contains the material is 
first be sure your iTunes is set to view mode to list, which is not the 
default. Once this is done, the sources and material appear to VOiceOver as a 
table and VO-command-t and VO-command-shift-t will take you forward and 
backward respectively through tables. THe VO or VOiceOver keys is control and 
option held down. THis might seem a foreign thing to do initially, but I think 
you will catch on quickly and this is only answering your questions since there 
is so much more to learn and information available to get you going.
