Hi Maurice,
To do this in pages you need to bring up the inspector using Cmd+Option+I.  So, 
first select the text you want to change the spacing for, then bring up the 
inspector.  Make sure the Text radio button is selected in the inspector and 
then select the Text tab as well.  Spacing is one of the options on this page, 
along with color, alignment, and some others.
