Hello William, I'm not sure what you mean by Overwrite mode.
In Pages, you can select a model which contains fake Latin in the areas where you can enter your own text. As soon as you start typing, the fake Latin disappears. Alternatively, if you have a document you wish to change while still keeping the styles, you can highlight text and overwrite it. This is what I do all the time when translating. All styles and fonts remain unchanged.
