Hi,

I don't know about the doc but, its very easy to do in the application folder.  
from the finder press Command shift A to open the application folder.  Then 
Press command shift N to create a new folder.  And edit field will appear with 
untitled folder in it.  Erase that, and name the folder and press return.  Now 
the folder is in you application folder.  Now its just a matter of copy and 
pasting the apps you want to the folder and then deleting the original apps 
that remain in applications
