You want to wait until the screen fully comes up.  Now, just press command+F5 
to stat VO.  Be aware that because you are now running off the DVD, the 
response will be a littel sluggist.  Once you are in the menu structure, you 
will see the utilities menu.

The thing you're overlooking is that, once the install comes up, you need to go 
to the utility menu and from there, select the disk utility.  You should be 
familuar with what to do from there.
