• The Mac simply reverses the colours.  Therefore black becomes white and vice 
versa.  All colours in between are also reversed.  This is done via the oS and 
thus is not app specific.  I used to use this sort of thing prior to my eyes 
getting past the visual usefulness and found it to be quite helpful.

2.  Also, would running at a 800x600 screen resolution still be an option (at 
least until the time when I finally surrender to screen magnification)?• This 
should not be a problem at all.  Simply set the resolution in your System 
Preferences and it shouldn't be an issue.  There are some apps that don't like 
this low of a screen resolution and will not work so that may cause you some 
frustration.  I'm not sure which apps this affects other than a few I've 
encountered on MacOS Server.

3.  Finally for now, and not really on an accessibility issue, does the Mac 
Mini offer enough performance? Sorry, I know that this question is kind of 
subjective, but I have had some experience recently on a net-top PC (atom 
powered) that has made me all too aware of how much I hate slow start-ups and 
the lag between clicking on an icon and actually being able to use that 
application.

• The MacMini is a good little machine.  I'm positive that you won't experience 
this sort of lag on the Mini.  I have a MacMini Server managing over 1300 users 
and there's no real issues to speak of.  I have another MacMini as a replica 
for safety purposes but have yet to have any problems with either.  The only 
problems I've heard of when using the MacMini is when running it headless.  
This situation will often cause slowdowns.  I don't think you'll have this 
problem though as you will be running a monitor for sure due to your residual 
vision.
