If enough of us request it then I am sure they will listen.  You have to 
remember us blind mac folk are a very small community in comparison to our 
Windows cousins.  For things to happen we have to be proactive and contact the 
developers and request that they add VoiceOver support.

More blind people are flocking to the Mac via either word of mouth 
recommendations, or due to their positive experience of the iPod Nano or 
iPhone/Ipod Touch.  
If developers feel there is enough of an audience to put the effort into making 
their products accessible then I am sure they will.  So if you want a product 
to become accessible then let them know.  It is not exactly rocket science to 
make applications accessible on the Mac, all the help is there on the Apple 
developers website.
