This is fairly easy...

In the accounts tab of mail preferences there is a line with
Outgoing mailserver: SMTP

The SMTP is a combo box, and if you click on that there is an option
to edit your SMTP servers.  This will bring up a new pane, and you can
add/remove SMTP servers there.  Once you have done this, then mail
will pop up a dialog box if your SMTP server is not working, and in
this dialog  box is a  list of SMTP serves. Just select the SMTP
server you want from there and hit enter, and your mail will attempt
to use the selected server.
