Hello Jeff, Apologies for the delay in chipping in on this thread but we've had a public holiday over here.
I raised this very issue a few weeks ago over on the mv-dev list and got some extremely helpful replies (as ever). My suggestion would be that you find and download MAMP. This is a local dev setup for mac. You get a new install of MySQL, Apache and PHP. The PHP which comes with MAMP seems to be a more complete install. One thing to note is that the MAMP install listens on non-standard ports. While this can be changed, I probably wouldn't recommend it.
