This can still be done.
Select a phone call, then flick down twice to Trash. Then do a one finger 
double tap to delete the item from the list.

time to time and delete details of old phone calls by doing a 1 finger flip up 
on the desired phone call item and choosing delete.
This no longer works on IOS26. The flip up offers lots of options about 
reminders but no delete option. Is there perhaps a setting to autodelete phone 
call history older than a specified time?
