Then pair the new watch, and select to setup from a backup. You will be presented with a list of backups to choose from. Just choose the most recent, and you should be pretty much where you were on the old watch. Be aware that the new watch will have features that did not exist on the old watch, so you will have to setup those features without the benefit of a backup.
