That is awesome! I would never ever have thought of that shortcut key. Where are those found? In other words, where can I go to find a list of all of those numbers-row shortcut keys?

No need to open Quick Time.
Try this.
1 press command+shift+5 on the keyboard , not the numPad.
2 choose  record entire screen
Capture refers to screen shots.
3 press the options button 
press enter to select the options of your choice, such as,
Where to save the recording
no time limit of the recording
choose the microphone…
4 Now press the record button.
5 to stop the recording go to the extras menu,  VO+Shift+MM, You will find the stop button.
