The combination I have found that works the best for this is using QuickTime make screen recording option along with an audio program called loop back where I create a new input source in combine the voice audio with my microphone input. There is a version of OBS studio for the Mac, but I have never been successful at getting into work well enough with VoiceOver to set up.
