I also have my Mail Preferences Message Format set to Plain Text on
the Composing tab, and that generally works well for me, but HTML mail
(e.g., such as web page enclosures from sources like the NAXOS
newsletters) still display as HTML. Generally, I'll keep those in
that format. I use Command-Option-P if I want to force a change to
Plain Text.
