I use audio hijack every day, and have adjusted these permissions, and have no issues at all. Another app I use pCloud, needs the same permissions, and again, have no issues.

Apple's developers are restricting the availability of kernel
extensions for security reasons. You're using an application that
still depends on them, so you'll have to follow those instructions

As far as I know, changing the security settings as instructed

settings to be changed. If you want to go ahead, it's at your own
risk, and at some stage, Apple may well decide to disallow kernel
