So, this is a two step process.
1. Scanning the document and getting an image.
2. Converting the image to text.

In general the "Image Capture" app that is bundled with the Mac does a fairly 
good job of having accessible controls and a fairly simple set of default 
buttons. You pick a device from the table. Then you can pick a destination and 
page size. 
There is a details button that allows you to pick several image types (jpg, pdf 
are included) and resolutions and also pick color or black and white.
Finally there is a scan button.

With the newer text features that came with MacOS 12, perhaps you can then 
directly get the text.
I did check, and Image Capture recognizes my HP all in one.
