Hi,

On the Airpods Max, did you hit the square button to select cancellation mode. 
This should eliminate all background noise. If you have it set to Transparency 
Mode, You will hear background noise.

Well, the mic is not an issue.

Its more that I hear the sound from others coming through headphones quite 
muffled.

This happens with my AirPods max as well as beats studio.

My experience is similar to that of Herbie.  That is, whether it’s Zoom, Webex, 
Google Meet or FaceTime, or any other meeting client for that matter, if you 
set your mic to either use the internal Mac mic, or use an external desk mic, 
the sound in the headphones will improve considerably.

One trick you can do with zoom on the Mac when using Bluetooth headphones.

It’s the mic specifically that changes the audio quality and when not engaged,
