Hi John,
The solution was not to change the VoiceOver  output sound device.
There is a checkbox I’n Zoom to include system audio.
Zoom automatically changed the system sound output from speakers to the Zoom 
audio, so after my recording, before closing the Zoom app, I changed it back to 
speakers.
I wanted to be on the safe side, It may have changed back on its on, But I 
didn’t want to take any chances of loosing VoiceOver speech again.
