Apple's documentation indicates that using right/left-arrow to expand/collapse
folders works only in list view.

Column view is my preferred Finder interface. In the past I used to use
Right Arrow to expand a folder and Left Arrow to colllapse a folder. This no
longer works in Bigsur.
However using Tab to expand a folder and Shift+Tab to collapse a folder
works fine. I recall this is how Windows works. I prefer the Right Arrow and
Left Arrow but can live with the Tab key approach.
Hope this helps others who have encountered this problem.
