Hello, If you are using H recent versions of MacOS this is fairly hard to do. The permission system requires that the end user authorize every application that is using a Microphone or camera much like on IOS. Also, with Catalina, it is much more difficult to install kernal extensions that could circumvent system access requirements to items. It is quite possible that “whole disk” access would also permit camera and microphone access so when you are reviewing the applications that you have granted access to in system preferences, also check the full disk permissions. Also with Mac’s that have the finger print sensor or the T2 security chipset the camera and computer microphone are supposed to be controlled by that chip so one would need to crate a hack to the installer and then modify code for the T2 chip which I believe is proprietary API only available to a limited group.
