I hope this makes sense but I found these instructions. bare in mind I am
not using, just sharing.
first press escape to bring up the record bar.
I am assuming quicktime is already presently active.
Then hold down alt option to bring up the pause button
you should? then be able to select the pause button in the usual way.
Unfortunately the directions for resuming recording indicate choosing the
red button, which I hope is labeled somehow.
I found this information by searching the term,
"how to pause and resume recording in quicktime?"
One result refers to pausing with the details there.

by a Play/Pause toggle. I see know way to get the Record button back without
