You can try in the Watch App, on iOS: general; language and region; custom. Set it there and then you may have to wait for some download that just happens while the watch is charging . Good luck.

Hello, hi for very interesting set of reasons had to upgrade my Apple Watch this past weekend. Now I’m trying to figure out how to separate its voice from my phone. I’ve gotten several different answers in general from Apple disability tech support. So is there a straightforward way to do this? It is a brand-new series 5 watch, running of course the latest version of watch OS.  Thank you in advance for any suggestions and/or guidance someone on the list has to offer.
Sincerely Maurice Mines.
