Well, I figured how to change the default program for opening a given 
extension (MP3 files defaulting to Quick Time).  Selecting an MP3 file and then 
entering <COMMAND>+i opened the file information dialog where I was able to 
then change the default program for all files with the MP3 extension.

The selection for the default program is somewhat buried at the end of the 
dialog, but if one sticks with it the item will eventually be encountered.
