Thanks Tim I hope to try this soon.

Hi,
This is totally doable on iOS if you also have a Mac. You can connect
the iOS device to your Mac with the USB charging cable. Go to QuickTime
on your Mac and choose "New Movie Recording" from the file menu. In the
resulting window, VO-space on the "Show Capture Devices" pop-up and
select the iPad or iPhone for both video and audio capturing. By
default, the volume seems to always be muted, so VO-left to the Full
Volume button and press it. Finally, VO-right to the Start Recording
button and press it. Because you are doing a movie recording, you get
both the video and audio from the iOS device recorded by QuickTime.
Press the Stop button to end the recording and edit/trim/save your
product.
This appears to be more challenging on the Mac. I can use an app called
Reflector to capture the video content, but the VoiceOver Audio is more
challenging. I've got some ideas, but need to round up a cable or two
to test before I make any commitments as to its usability. The audio
and video is mirrored when using Reflector and an iOS device, but I
haven't bothered messing with recording this way yet.
HTH.

Someone ashed about this and I have not seen any responses. I also
want to know if this is possible on both the Mac and iOS devices.
