I did this a couple of weeks ago.

First, this is very important, You have to sign out of your Apple ID on all 
your devices, iPhone, iPad, Mac, etc. etc.

Then change it via a browser like Safari, go to apple.com <http://apple.com/> 
and sign in using your old Apple ID. There’s a direct website as well, but I 
can’t remember it now.
While changing it, remember to set up a second recovery email address right 
away.

Once this is done and you’ve signed out of that page, start signing in with 
your new Apple ID on your devices one at a time.
First for example take your iPhone, switch it off and back on again, then sign 
in using your new Apple ID. Only once the first sign in is successful, go on to 
a next device like your Mac.

The restarting of a device before you sign back in was recommended to me by a 
friend, I can’t really say if it makes a difference, but I did it anyway for 
what it’s worth.
