In place of preview I use skim which is a free open source pdf reading app.
It is being actively developed and updated.
It is smaller in size and faster and does a better pdf presentation in my
experience then does preview.
Once the pdf file is loaded into it; one can use the cmd-a and cmd-c
commands to capture the entire text into the clipbord. From there it can
be pasted as plain text into a file of one's choice.
It will read pdf files on one's hd or from the web by giving it a url
addresss for a pdf file.
